  • 1/2 cup of authentic long-aged balsamic vinegar –  we love the Gold Series Balsamic Vinegar of Modena IGP from our biodynamic Italian producer Acetaia Guerzoni 

  • 1/2 cup of fresh extra virgin olive oil – our favourite for this classic balsamic dressing is the award-winning Balanced Early Harvest Extra Virgin Olive Oil crafted at the family-owned Papa’s Grove  in the picturesque Greek region of Peloponnese

  • 2-4 teaspoons honey – use more of it to create a gorgeously sweet vinaigrette or a bit less if you prefer a more savoury dressing

  • 2-3 teaspoons Dijon mustard– even a touch of it will bring out the boldness of the balsamic. The mustard also helps emulsify the vinaigrette and gives it a thick luxurious quality

  • 1-2 garlic cloves - minced or pressed

  • Dried thyme, parsley, basil or oregano – herbs balance the sweet and zesty notes of the vinaigrette with mild, more earthy flavours. 

Place all the ingredients in a jar, seal tightly, shake vigorously.

Drizzle on salads, roasted veggies, grilled peaches, cooked pears or slices of ripe watermelon. This versatile sweet and savoury combination will elevate your taste and aroma experience - it’s not only delicious, it’s incredibly healthy too!
