WHY NIGHT HARVEST
Every year, during the first full moon of October, the olives are picked by hand at night, when the air is cool, while the fruit is still green. They are milled within hours of picking. Quantities depend on each year's weather, so every edition is small.
TASTING NOTES
On the nose it is very fresh, with green olive, olive leaf and apple. The entry is elegant, with sweet almond and a touch of tomato. Intensity builds into artichoke and green almond shell bitterness, with a subtle, long-lasting spice.
PAIRING
Use it in full-bodied soups, pesto and home-made sauces, or add a touch of luxury to paella. It is at its best raw, where the bitterness and pepper come through.
OLIVE VARIETY
Lechín and Acebuche (wild olive). A blend of centuries-old Lechín trees and wild acebuche olives, some over a thousand years old, from the Herriza de la Lobilla estate.
ABOUT THE PRODUCER
Herriza de la Lobilla was founded in 2018 by Álvaro Pallarés. The family runs its own boutique micro-mill in Osuna, controlling every step from harvest to bottling.
